At least once a week, I see friends asking for dinner suggestions! I know, I'm in that boat a lot, because I hate to cook and food just doesn't inspire me!
Well, I'm trying to save us all! Over the last several weeks, I've been documenting a few dinner ideas, and I've compiled them all, and hopefully, you'll have some inspiration this week.
I'll link recipes where I can, and I would LOVE for you to share your dinner ideas in the comments at the end of this post!
First up, Chicken Pot Pie.
When, I was a kid, I hated chicken pot pie, but then I found this recipe and tried it a few years ago, and every once in a while, I'll whip this up because we're in need of comfort food.
This recipe makes enough for two chicken pot pies, so I'll make one, and then I'll freeze a second.
Pot Roast
I feel like pot roast is hit or miss. But, I was at HEB and found a pot roast that was pre-packaged with the veggies, meat, and seasoning, and wow! This was so good! Back in the day, I would use Paula Deen's Pot Roast recipe, which is super yummy!
I love when the girls help in the kitchen. On this night, we were making Panko crusted chicken breasts. The girls LOVE this meal, because they think it's chicken nuggets. And friends, it's super easy to make! I just whisk an egg or two, and in a separate bowl, I'll add Panko bread crumbs, salt, pepper, and Italian seasoning. Dip your chicken in the egg, and then coat in the bread crumb mixture. Bake until cooked through.
White Chicken Chili is a favorite soup of mine, and so easy to make in the crock pot.
I literally just add frozen chicken breast, broth, and beans. But if you need a recipe, I'll link one here. I love to top mine with Fritos and Cheese.
You guys know we're loving Costco, and the girls are obsessed with their Chicken Cordon Bleu. On nights, that we're super busy, I'll pull these out and bake them.
These Teriyaki and Pineapple meatballs are also yummy! I just cook them over the stove, and then I'll make mac-n-cheese for the kids and veggies.
Chicken Fajita Soup is another easy crock pot recipe!
It's another that I start with frozen chicken breast, broth, peppers, and rotel, and serve with chips and cheese.
And, this was another Costco meal! But, it was super yummy and would be easy to make yourself at home! Basically, it was noodles, chicken meatballs, spinach, and baby tomatoes, in a garlic wine sauce.
Or, you can just buy it from Costco :) They have several pre-made meals. On those rushed mornings, when I forget to plan ahead, I run to Costco, pick up a meal and just heat it up at home. Lately, I've been doing this more than I'd like to admit.
And finally, this weekend, we had Chili! It was cold here, and we were just needing a classic family dish! DJ's dad gave us his chili recipe when we first got married, and it's what we always make!
