What's Up Wednesday

Happy Wednesday! I'm so thankful we are close to wrapping up this month! It started off great, but got really busy, and kind of went down hill. I'm ready for March and warmer weather, and gasp- spring football. 

Today I'm linking up and sharing a little What's Up Wednesday. 

1. What We're Eating This Week:
I'm not the meal planning type, but this week, I actually wrote down what we'd have for dinner!

Monday- Sheet Pan Chicken w/ Potatoes, Bell Pepper, Carrots
Tuesday- Ravioli
Wednesday- Panko Chicken w/ Mac & Cheese, & Broccoli
Thursday- Tacos 
Friday- Pizza or a quick Costco meal 

2. What I'm Reminiscing About:
Our family camping trip we took at the begining of the month. We've tried booking another trip for Spring Break, but can't get in anywhere that we wanted to go, but I've also had more days off than I had anticipated this month, and I think we'll have a mini staycation or take a day trip. Anyway, our camping trip was a blast. I loved being able to unplug, hike, and be together as a family. We went to west Texas and expored Davis Mountain State Park, the UT Conservatory, and drove in to Big Bend National Park for some hiking.

3. What I'm Loving:
I made a commitment to myself to workout every day for at least 30 minutes. On Sunday, I hit day 50. There were days where I was sick, or tired, or traveling, but I pushed through and got it done. 

I use the aaptiv app for workout videos, but also to keep me accountable. You can use my referral for a free 7 day trial. 

I've also been loving the Bible Recap. I have heard about this for years and never thought it was something I could actually do. I've tried reading the Bible through on my own and it was sometimes boring and hard to get through. The Bible Recap makes it so much easier! You can search for it on your Bible app, but also be sure to listen to the podcast as well. I listen while I'm driving to work or getting ready for my day, and the podcast makes it so much easier to understand what I've read that day. 

4. What We've Been Up To:
Megan and Gretchen both attended DNOW with our church this past weekend. This was Megan's first big church activity and she had lots of fun! Gretchen loves youth group, and I'm hoping that since her play practice is over, that they'll both be able to go consistently again. 

While the big girls were at DNOW, DJ and Adalyn went to the Texas basketball game on Saturday and Adalyn scored herself a free shirt! 

Then they went to the Austin RV Expo to look at campers. We've thought about upgrading several times and we have a few campers that we love, but while ours is small- it was the right price, we can pull it easily, and we're not actually in it that often while we're camping. And as fun as it would be to have a big, bright, shiny, new camper- we always find a reason to talk ourselves out of it 

While DJ and the girls had a weekend full of activities, I went home for my uncle's funeral. I didn't like why I had to go home, but I'm thankful I had the chance to. I wen thome last Wednesday, and had a family dinner with my parents and brother's family. My mom and I went shopping on Thursday, and I spent Friday and Saturday with my extended family. I was reminded about the strong women in my life and the influence they've had over my life. I'm so thankful for them. 

5. What I'm Dreading:
Both Megan and Adalyn have decided to try out for their school's spirit teams. Megan is trying out for 7th grade cheer and Gretchen is trying out for her high school dance team. I'm so excited for both of them, but clinic and tryouts are on the exact same days, and they'll both find out next Friday. 

I have full confidence in them both, but gosh, I'm nervous, and the fact that they both find out on the same day is low key freaking me out. I'm not sure what I'll do if one makes it and one doesn't. I've already talked to them about being excited for the other one, but that it's also okay to be sad. Wish us luck! 

6. What I'm Excited About:
Spring Football is right around the corner, and while I never look forward to the longer hours, being able to take the girls to practice every once in a while and to the Spring game is always fun! 

7. What I'm Watching/Reading:
I read Layla on our camping trip. It may be my favorite Colleen Hoover book so far. 

I've spent my nights watching Friends re-runs or Golden Girls. I'm about to start watching YOU, but I need to make sure I'm not too tired because I know i'll want to binge a few episodes. 

8. What I'm Listening To:
I've been listening to the End Zone Wives podcast recently. I was interviewed a few weeks ago, and I've spent a lot of time in the car, so I've listened to a few of their interviews. 

9. What I'm Wearing:
As always, I'm wearing my favorite leggings on repeat. 

I found this thermal top at Old Navy on clearance and knew it would be perfect for work or cozy days at home. 

I needed a new dress to wear to my uncle's funeral and found this tiered linen dress that has the most beautiful lace detail around the hem. It also comes in pink and would be great for Easter! 

And grabbed this luxe top as well; it's perfect with leggings! 

10. What I'm Doing This Weekend:
Resting. I feel like we've been on the go every weekend in February, and I'm looking forward to just relaxing and keeping it low key. 

11. What I'm Looking Forward To Next Month:
Spring Break, Spring Football, and warmer weater please. 

12. What Amazon Purchase I Loved This Month:
Gretchen's 15th birthday bash was this month and I found the best 90s themed party favors for her. I ordered slap bracelets, butterfly clips, and tamagotchi dupes.

What's Up Wednesday

Happy Wednesday friends! I'm not sure about y'all, but after this last week that Texas had I'm ready for warm weather and Spring! We've gotten a little teaser because the weather has been in the 70s for the last 3 days but it's about to get cool and rainy again. #overit

What I'm Reminiscing About
Our trip to west Texas earlier this month was fabulous! I've been wrapping up all we did on the blog, and still have another post or two to write up, but having the time away, the sunshine, the hiking, the stars. It was just perfection. We have some more camping trips planned this Spring and an epic trip this Summer that I am so excited about!

What We've Been Up To
Well, last week we were just trying to stay alive. We lost power and didn't have water for 3 days. It was cold, but our camper kept us warm in the driveway, and DJ has impecable snow driving skills! You can read all about our adventures from this post. 

What I'm Dreading
Work is going to be crazy the next few weeks since I missed a day for our camping trip and wasn't able to make it up when the snow came through, and on top of that, we were out the following week for snow, so I'm trying to get all of my speech kiddos sessions made up! It's going to keep me busy! 

What I'm Working On
I have a few small home improvement projects I want to tackle in the next few weeks... painting our downstairs bathroom, painting our bedroom, changing out some light fixtures, and changing out the hardware on the kitchen cabinets.

What I'm Excited About
We are heading to Arkansas over Spring Break for a small camping trip and then we're off to see DJ's parents that we haven't seen since last May :( 

What I'm Watching/Reading
I just finished Firefly Lane over the weekend and it's so good! 

What I'm Wearing
Y'all, my fashion sense is majorly lacking right now. I'm living in leggings and sweatshirts and desperately need to do some Spring wardrobe shopping. 

What I'm Doing This Weekend
Gretchen has a church event that she's going to and we will just be hanging out. It's suppose to rain, and I still feel like we're in recovery mode after the snow events of last week. Plus, I'm working more this week, so this weekend, I'm planning on full on recovery mode. i.e.: lots of TV watching. 

What I'm Looking Forward To Next Month
Um, have I mentioned our camping trip?

After our trip, spring football starts, but I can't really say I'm looking forward to it!

I really am just looking forward to sunshine and warm weather. It's the only thing I want right now!

What's Up Wednesday

 Happy Wednesday friends!!!


January usually drags on, but for some reason it's gone by really fast this month and I'm really thankful for that! I'm already counting down until Spring, and ready for warmer weather and lots of outdoor time.

What We're Eating This Week:
Monday we had whatever we could find. DJ ended up working late and I was running kids to all of the activities, so I think they ended up with corn dogs, and I ate cake & ice cream! DJ had CFA.
Tuesday- Homemade Pizza
Wednesday- Kung Pow Chicken
Thursday- Spaghetti
Friday- Sausage & Veggies

What I'm Reminiscing About:
Gretchen turned 13 yesterday, so of course I was looking through all the birthday pictures throughout the years, and definitely missing baby Gretchen. 

What I'm Loving:
It's January, so I'm loving the refresh that I'm having right now.... my husband is probably not loving it though!

I picked up new pillow covers at Ikea a few weeks ago, and I ordered bedding for the girls bunks in the camper, and I've been on a re-organizing spree and have cleaned up the pantry, linen closet, oil closet, and bedroom closet! I think Gretchen's closet is next on my to-do list! (Be sure to come back tomorrow to see our linen closet and bedroom closet)

What We've Been Up To:
A few weekends ago we drove to Houston and went ice skating. 
These girls have learned a new trick. 
Adalyn and I were able to get in a little girls night. 
And, we celebrated having a teenager yesterday! 

What I'm Dreading:
Not too much of anything right  now, other than the inevitable play room clean up that has to happen. It's never fun for the girls or me. 

What I'm Working On:
I'm working on some fun things for my oily team and can't wait to share them all!
I'm also working on a fundraiser for a sweet friend of mine. Her husband is undergoing surgery tomorrow and ultimately needs a kidney transplant. My ultimate goal is to sell 50 bottles of Lavender essential oil and 100% of the proceeds will go to the family, and as you can see, we have a long way to go! What I'm Excited About:
We have a camping trip coming up and I'm so excited! We haven't been camping since Summer, and I'm ready to break out the camper again for all of the trips we have planned this Spring!

What I'm Watching/Reading:
The girls have been watching college gymnastics meets. I'm watching The Hills on Amazon Prime, and just finished watching Vanity Fair on Prime. We are down to one TV right now, because we cut cable and haven't bought more apple TV's yet, so my TV time is sparce.

I'm currently reading through my 2nd Danielle Steele novel of the year. 

What I'm Wearing:
Anytime I put on real clothes, I'm quick to slide in to these comfy shoes. My husband kids hate them, but they have fur and they're a total win in my book. 
I'm also living in these leggings. 

What I'm Doing This Weekend:
I told DJ if the weather is nice that I'd love to get out and go hiking, but there's a small chance of rain on Saturday. 

What I'm Looking Forward To Next Month:
Definitely our camping trip, and then, we'll have our annual pizza night with the girls for Valentine's Day!

What's Up Wednesday

1. What We're Eating This Week.....

After being off my diet this past week, we're back on to eating healthy this week!
Monday- Chicken & Green Beans, Quinoa, and Oven Baked Potato Wedges
Tuesday- Chicken Cordon Blue & Veggies
Wednesday- Spaghetti
Thursday- Chicken & Veggies
Friday- something fun after having chicken & veggies twice!!

Psst- we eat a lot of chicken and veggies at dinner; it's just easy. I'll usually do a crusted chicken or lemon pepper..... I just try to change up the seasonings/flavor, and we all love it. 

2. What I'm Reminiscing About...
Right now, I'm just looking forward :)

As a mom, there are times that I get sad that my girls are getting big, but I'm loving this stage right now, and I feel like we're in a good place. Of course, there are hard days, that make me miss the babies they once were, but right now, I'm looking forward to what's ahead and the fun adventures we'll have in April. 

3. What I'm Loving....

4. What We've Been Up To....

5. What I'm Dreading.....
It's suppose to rain on Saturday......

I mean, I'm grasping at straws, but I'm not really dreading much right now. 

Update- I checked the weather, and we're down to a 20% chance of rain..... so yeah, I'll keep grasping, because I'm not dreading much at the moment. 

6. What I'm Working On....
all things Young Living..... last month, we launched a Thieves Home Cleaning challenge that wraps up this week, and it's been fun!!!!

I'm a super organized, neat freak, Type A personality, so it's been fun to help busy moms along on their journey to a clean house. 

Our big take aways, were to reset your kitchen every night and make your bed every morning. It's amazing, what you'll accomplish with a clean kitchen and freshly made bed. 

7. What I'm Excited About....
The Spring Game is soon, and Ludacris will be performing in concert after the game! College me is super excited! 

8. What I'm Watching/Reading....
My mom lent me this book while I was visiting last week, and it's cute.... I mean, being raised in Arkansas, I know a lot of what Reese is sharing and can identify with it, but it just brings me back to my childhood and makes me appreciate my southern roots. 
I bought this book when it came out, but haven't found too much time to dig in yet.

9. What I'm Listening To.....
I'm currently writing this while sitting in gymnastics class for Megan and Adalyn.... so lots of little kid noises. 
10. What I'm Wearing.....
I bought this dress at Nordstrom Rack a few weeks ago, and wore it last weekend to my niece's wedding. It was the perfect amount of "flowy" with a fun neckline, and three quarter sleeves. 

11. What I'm Doing This Weekend....
I originally thought this weekend would be low key, but DJ has football practice, we have a birthday party to go to, and Gretchen has her acting class practice. So, it's looking like we'll be pretty busy! 

12. What I'm Looking Forward To Next Month....

Texas has their Spring Game in two weekends, which means we've made it through Spring Ball, and DJ won't have to wake up at the crack of dawn anymore.

We're also excited about Easter, but we plan on having a low key celebration here at home. 

And hopefully, we'll be able to take a weekend and explore the surrounding Austin area a bit. 

13. What Else Is New.....
We have a few new flowers in the flower bed.

Monday was gorgeous, so I went to Home Depot, picked up several plants and Megan helped me plant them when we came home. I still have plans to add Lavender, Milkweed, and a big cactus looking plant, that I need to figure out the name of! 

Bonus Question..... What's Your Favorite Easter Side Dish.....

Give me all the Broccoli Cheese Rice Casserole! My cousin Kelly makes the best, and thankfully she passed her recipe down to me, so I think I'll have to make it this year!

What's Up Wednesday

1. What We're Eating This Week:
Monday: Panko Crusted Chicken with Squash and Sweet Potatoes
Tuesday: It's our busy night, we'll eat whatever we can find

2. What I'm Reminiscing About
How fast this little girl is growing. 

We were cuddling in my bed last week, and she wanted to hide under the covers from her daddy. She was 100% convinced that he would never find us. Her little giggles were the best, and it just reminds me how fast time flies. 

3. What I'm Loving
First up, the weather. We were able to get outside all weekend and it was gorgeous!

4. What We've Been Up To
This past weekend we drove to Fredricksburg, Tx, but first, we stopped at the original Salt Lick BBQ to eat, and let the girls play. 
Fredricksburg is an old town in Texas that was settled by German immigrants. I've heard that it's a quaint little town, and great for a day trip, so we took the day to explore. 

We walked through the shops, treated the girls to some candy, and went to the National Museum of the Pacific War. 

The girls enjoyed learning about Pearl Harbor and World War 2. 

5. What I'm Dreading
Um, nothing at the moment. 

6. What I'm Working On
We're kickstarting a cleaning & home organization challenge in March, so I've been busy putting it together! Spring practice begins next month, and we're looking forward to heading to The Bubble to watch UT practice on Saturdays. 

8. What I'm Watching/Reading
I finished Becoming earlier this month, and wrote a book review here, and I have a new book review coming soon :) 

9. What I'm Listening To
We watched A Star is Born and Bohemian Rhapsody this weekend and I could basically have both of the soundtracks on repeat right now. 

10. What I'm Wearing
I'm obsessed with these jeans, and I've had these slip ons on repeat lately. Mine are out of stock, but here's a similar pair, and this jacket.
Our weather has been all over the place lately. I'm thankful I get to wear yoga pants to work, because I'm often on the floor with kiddos. This tee is thick and comfy, and I paired it with a scarf, and my Hunter boots because of the rain.  My scarf is old, but here's one that's similar.
It's those jeans again, and a soft navy 3/4 sleeve tee from Loft.
I've worn this cowl neck sweater on cold days with my favorite leggings. 

11. What I'm Doing This Weekend
It's suppose to be rainy on Saturday, and we have no pressing plans. Who knows what we'll end up doing.

12. What I'm Looking Forward to Next Month

The girls and I are also taking a road trip to Arkansas for Spring Break. We can't wait to go back to see my parents and family, and the girls will be flower girls in my niece's wedding. 

13. What Else Is New
Not a lot of anything.

Megan starts a new gymnastics company and will be on their show team, and we're super excited for the change...... Gretchen's busy with school, and she's trying to save animals (more on that later).... and Addy's just being Addy, and trying to keep up with her big sisters.
