Girl mom's have it rough when it comes to getting their girls out the door on a school day, let alone, any other day! Even though my girls are 6, 3, and 1, this fact is 100% true right now. It will only become worse as they become teenagers.
This year, I'll be in charge of getting my little honey pie's up, dressed, hair fixed, teeth brushed, out the door, and to daycare, and then my oldest to school, and we all have to be on time. So, I have to be proactive and be prepared.
Last Friday, I spent most of the afternoon and early evening making breakfast muffins for us to be able to have a quick breakfast for those rushed mornings! Muffins are the perfect grab and go, they freeze easily, and can be taken out just a few at a time the night before.
I made these Funfetti breakfast muffins, and let the girls taste test them before I put the rest in the freezer. They were a hit with the girls! You can find the recipe here.
I made these muffins last year and I loved them! They are perfectly sweet, and a wee bit messy!
I also made banana bread muffins, using bananas that I had frozen in my freezer. Did you know you can freeze bananas? Just peel them, throw them in a freezer bag, and then when you're ready to use, you can pull them out and put them in a bowl to thaw a bit.
Finally, I made Strawberry Muffins, using a recipe that a friend had posted on Facebook. And, i'm sharing it here with you!
- 3 eggs
- 3 c. flour
- 2 c. sugar
- 1 tspn cinnamon
- 1 1/2 c. oil
- 1 tspn baking soda
- 1 tsp salt
- 2 c sliced strawberries
- 1 tspn vanilla
- 1 banana
Mix your dry then wet ingredients, fold in the strawberries, pour batter into greased muffin tins, bake 350 for 20-25 minutes.
You can also substitute strawberries with blueberries or other fruit!
